Save A bold and inventive fusion dish that layers ramen noodles, spicy ground pork, tangy tomato sauce, and creamy cheese for a comforting, flavor-packed meal.
The first time I made this spicy ramen lasagna, everyone was curious about the combination. That cheesy, spicy sauce and soft noodles made for a family dinner we still talk about.
Ingredients
- Ramen noodles: 4 packs instant ramen noodles (85 g each, seasoning discarded)
- Ground pork: 500 g (can substitute ground chicken or beef)
- Vegetable oil: 2 tbsp
- Onion: 1 medium, finely chopped
- Garlic: 3 cloves, minced
- Ginger: 2 tbsp grated
- Gochujang: 2 tbsp Korean chili paste
- Crushed red pepper flakes: 1 tsp (adjust to taste)
- Crushed tomatoes: 1 can (400 g)
- Soy sauce: 2 tbsp
- Rice vinegar: 1 tbsp
- Sugar: 1 tsp
- Salt and pepper: to taste
- Ricotta cheese: 250 g
- Egg: 1 large
- Mozzarella cheese: 100 g shredded (divided)
- Parmesan cheese: 50 g grated (divided)
- Green onions: 2, thinly sliced (for garnish, optional)
Instructions
- Preheat Oven:
- Set your oven to 180°C (350°F).
- Prepare Noodles:
- Cook ramen noodles in boiling water for 2 minutes less than package instructions. Drain and set aside.
- Make Meat Sauce:
- Heat vegetable oil in a large skillet over medium. Add onion, garlic, and ginger. Sauté until fragrant and translucent, about 3 minutes. Add ground pork and cook until browned, breaking up meat. Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season with salt and pepper. Simmer 10 minutes until slightly thickened.
- Mix Cheese Layer:
- In a bowl, combine ricotta, egg, half the mozzarella, and half the parmesan.
- Layer Lasagna:
- Spread a thin layer of meat sauce in a large baking dish (about 22x30 cm). Arrange a layer of ramen noodles (about one pack per layer). Spread a third of cheese mixture and a third of meat sauce. Repeat twice more. Top with remaining meat sauce.
- Add Top Cheese:
- Sprinkle remaining mozzarella and parmesan over the lasagna.
- Bake:
- Cover with foil and bake 20 minutes. Remove foil and bake another 10 to 15 minutes until cheese bubbles and lightly golden.
- Rest & Garnish:
- Let stand 10 minutes before slicing. Garnish with green onions if desired.
Save My kids love helping layer the noodles and cheese, and gathering around the oven while the lasagna bakes is now a fun part of our weekend routine.
