- Cheese & Pastry: 1 sheet puff pastry thawed, 200 g (7 oz) Brie cheese rind on sliced
- Fruits & Garnish: 1/2 cup pomegranate seeds, 1/4 cup fresh parsley leaves, 1/4 cup fresh rosemary sprigs
- Other: 1 egg beaten (for egg wash), 1 tbsp honey, 1/4 cup chopped pecans or walnuts (optional), Freshly ground black pepper to taste
Instructions
- Preheat:
- Preheat the oven to 200°C (400°F). Line a large baking sheet with parchment paper.
- Shape:
- Unroll the puff pastry sheet. Using a sharp knife, cut a 20 cm (8-inch) circle, then cut a 10 cm (4-inch) circle in the center to create a wreath shape.
- Assemble:
- Arrange the Brie slices evenly around the wreath base leaving a small border.
- Top:
- Sprinkle half the pomegranate seeds and all the chopped nuts (if using) over the cheese.
- Seal:
- Fold the pastry edge over the filling pinching gently to secure. Brush the pastry with beaten egg.
- Bake:
- Bake for 15 minutes or until the pastry is golden and puffed.
- Finish:
- Remove from the oven. Drizzle with honey and season with black pepper.
- Garnish:
- Cool slightly. Garnish the wreath with parsley rosemary sprigs and the remaining pomegranate seeds.
- Serve:
- Serve warm or at room temperature.
