Macaroni & Peas Delight

Featured in: Quick Weeknight Dinners

This dish combines tender macaroni and sweet green peas in a creamy, flavorful sauce that’s both comforting and easy to prepare. Start by boiling macaroni until al dente, adding peas in the final minutes. While the pasta cooks, sauté onion and garlic in butter until soft and fragrant. Drain the pasta and peas, then combine them in the skillet with milk, Parmesan, and reserved cooking water to create a smooth, creamy coating. Season with salt, pepper, and optional red pepper flakes, then toss until well blended. Serve immediately with extra Parmesan or fresh herbs for added flavor. Variations include using plant-based alternatives for a vegan option or adding proteins like ham or bacon.

Recipe FAQ

Can I use fresh peas instead of frozen?

Yes, fresh peas work well and should be added towards the end of cooking to maintain their sweetness and texture.

What type of pasta is best for this dish?

Macaroni is ideal due to its shape and texture, but similar short pasta like elbow or small shells also work nicely.

How can I make the sauce creamier?

Incorporate extra pasta cooking water gradually and ensure butter and cheese are well melted and combined with the milk or cream.

Are there alternative cheeses suitable here?

Parmesan adds a distinct savory note, but Pecorino Romano or a mild aged cheese can be good substitutes.

Can I prepare this dish ahead of time?

It’s best served fresh, but leftovers can be reheated gently with a splash of milk to restore creaminess.
