Instructions

Brown the meat:
In a large skillet over medium-high heat cook ground beef until browned breaking it apart as it cooks (about 4&ndash5 minutes) and drain excess fat if needed.
Add veggies:
Add diced onion and garlic and sauté for 2&ndash3 minutes until softened and fragrant.
Season:
Stir in taco seasoning salt and black pepper and mix well to coat the meat.
Combine and simmer:
Add uncooked pasta canned tomatoes with juices broth and tomato sauce and stir. Bring to a boil then reduce heat cover and simmer for 12&ndash14 minutes stirring occasionally until pasta is tender and most liquid is absorbed.
Make it cheesy:
Turn off heat and stir in shredded cheddar cheese until melted and creamy.
Finish with sour cream:
Fold in sour cream until well combined and creamy.
Serve:
Spoon into bowls and garnish with cilantro green onions or diced tomatoes if desired. Serve hot.
