Instructions

Cook pasta:
Boil bowtie pasta in a large pot of salted water until al dente. Drain and set aside, reserving 1/4 cup (60 ml) pasta water.
Season chicken:
Season chicken pieces with salt, black pepper and Italian herbs.
Cook chicken:
Melt 1 tbsp butter in a large skillet over medium-high heat. Add chicken, cook for 5 minutes until golden and cooked through. Remove chicken and set aside.
Prepare sauce base:
In same skillet over medium heat, melt remaining 3 tbsp butter. Add garlic and cook 1 minute until fragrant.
Add broth and cream:
Pour in chicken broth, bring to simmer scraping bits from pan. Stir in heavy cream and Parmesan until smooth.
Combine chicken and pasta:
Return cooked chicken to skillet. Add drained pasta, tossing together, use reserved pasta water to loosen sauce.
Melt mozzarella:
Sprinkle mozzarella on top, cover, let sit 2 minutes until melted.
Garnish and serve:
Sprinkle parsley. Serve immediately with extra Parmesan and black pepper.
