02 - In a separate bowl, whisk together almond butter, honey or maple syrup, and peppermint extract until fully incorporated and smooth.
03 - Pour the wet mixture into the bowl of dry ingredients, stirring thoroughly to combine. If the mixture feels too dry, incorporate a tablespoon of water until the consistency allows for shaping.
04 - Scoop out portions of the mixture and roll between your palms to form 1-inch diameter balls.
05 - Arrange the protein balls on a baking sheet and refrigerate for a minimum of 30 minutes to allow them to firm up.
