01 - Preheat oven to 400°F. Line a large baking sheet with parchment paper.
02 - Roll pizza dough on a lightly floured surface into a 12x16-inch rectangle.
03 - Distribute turkey, stuffing, mozzarella, and provolone evenly over the dough, leaving a 1-inch border.
04 - Spoon cranberry sauce across the filling and sprinkle with parsley, thyme, black pepper, and salt.
05 - Starting from a long edge, roll dough tightly, sealing the seam and ends. Place seam-side down on baking sheet.
06 - Lightly brush with beaten egg, sprinkle Parmesan and sesame seeds if desired.
07 - Cut 4 to 5 shallow slits across the top with a sharp knife to allow steam to escape.
08 - Bake for 30 minutes until crust is golden and fully cooked.
09 - Let rest 5–10 minutes before slicing. Serve warm, optionally with extra cranberry sauce.
