# Components:

→ Chicken

01 - 4 bone-in, skin-on chicken thighs
02 - 1 tablespoon olive oil

# Preparation Steps:

01 - Heat oven to 425°F. Line a large sheet pan with parchment paper or foil.
02 - In a large bowl, toss chicken thighs with olive oil, salt, black pepper, and dried thyme.
03 - In another bowl, combine baby potatoes, Brussels sprouts, red onion, and carrots. Toss with olive oil, salt, and black pepper.
04 - Spread vegetables evenly on the prepared sheet pan. Nestle chicken thighs among vegetables, skin-side up.
05 - Bake for 35 to 40 minutes until chicken reaches an internal temperature of 165°F and vegetables are tender and caramelized.
06 - In a small saucepan, combine cranberries and honey. Cook over medium heat for 3 to 5 minutes until cranberries burst and soften. Remove from heat and let cool slightly.
