- Preheat your oven to 425°F (220°C).
- In a large oven-safe skillet, cook ground beef over medium-high heat until browned, about 5–6 minutes. Drain excess fat as needed.
- Add chopped onion and minced garlic to the skillet. Sauté for 2–3 minutes until softened.
- Stir in ketchup, mustard, Worcestershire sauce, smoked paprika, kosher salt, and black pepper. Cook for 1 minute, stirring constantly.
- Add cream cheese and whole milk to the skillet. Stir until the mixture is creamy and slightly thickened, approximately 2 minutes.
- Stir in half of the chopped dill pickles. Remove the skillet from heat.
- Sprinkle 1 cup of shredded sharp cheddar cheese evenly over the beef mixture.
- Arrange the frozen tater tots in a single, even layer over the top of the beef mixture.
- Transfer the skillet to the preheated oven. Bake for 25 minutes, or until the tater tots are golden brown and crisp.
- Remove the skillet from the oven. Sprinkle the remaining ½ cup of cheddar cheese over the tater tots. Return to the oven for an additional 3–5 minutes, or until the cheese is fully melted.
- Allow the skillet to cool for 5 minutes. Garnish with shredded iceberg lettuce, the reserved chopped pickles or pickle chips, and thinly sliced green onions before serving.
