02 - In a skillet over medium heat, cook the sausage, breaking it into small pieces, until fully browned. Drain excess fat and let cool.
03 - In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, pepper, and thyme if using.
04 - Add cold, cubed butter to the flour mixture. Using a pastry cutter or fingertips, blend until texture resembles coarse crumbs.
05 - Stir in shredded cheddar, diced apple, cooked sausage, and sliced green onions to the crumb mixture.
06 - In a small bowl, whisk together milk, sour cream, and egg.
07 - Pour the wet ingredients over the dry mixture and stir gently until just combined, avoiding overmixing.
08 - Transfer dough to the prepared skillet. Press evenly into the skillet surface and score into 8 wedges with floured hands or spatula.
